About the Author

"Cindy Rice Andrea, RS, CPFS, CEHT, MSPH president of Eastern Food Safety, captures the basics of safe food handling in the timely Green Apple Tales book series. "Keeping our families safe from foodborne illness starts with our children," says Cindy, a food safety educator with extensive experience training the foodservice industry. An international food safety consultant, and food safety expert for ECOLAB. she earned her Bachelor's Degree in Biology from Bates College, and a Master’s Degree in Epidemiology from the University of Massachusetts School of Public Health. She has a number of public health certifications including Registered Sanitarian, Certified Professional in Food Safety, Certified HACCP manager and food safety trainer for industry and regulators alike. She serves on the Massachusetts Partnership for Food Safety Education; the Lifeskills Advisory Council to the Massachusetts Dept. of Education; and is a USDA partner for consumer education. She is a noted speaker and writes for the national publication "Food Safety Solutions." She is also the mother of 3 grown sons and lives in Massachusetts with her husband Richard, a Chef instructor.
